Dietary guidance: v
225g/8oz cherries, stoned
600ml/1 pint boiling water
piece of lemon rind
50g/2oz caster sugar
1 tablespoon of brandy (optional)
Put the cherries in a bowl and bruise them with a spoon and pour over the boiling water. Add the lemon rind and leave for 4 to 5 hours. Strain.
Stir in the sugar until dissolved. Add the brandy, if using.
