Lamb's Wool

Now this is a brilliant hot drink for Christmas or Bonfire Night.

1.75 litres/3 pints of ale
2 baked applies
few cloves
grated nutmeg
ground ginger
3 eggs


Warm the ale in a large saucepan (remember it is three pints). Stick the apples with the cloves and add to the pan with sugar to taste and the spices.

Beat the eggs in a bowl until smooth. Strain the hot but not boiling spiced ale on to the eggs and stir until a smooth, creamy mixture is obtained.

Drink hot!
