225g/8oz plain flour
2 teaspoons ground ginger
2 teaspoons baking powder
100g/4oz butter or margarine
1/2 teaspoon of bicarbonate of soda, dissolved in 1 teaspoon of hot water
2 large tablespoons of golden syrup,warmed
Sift teh flour, ginger and baking powder into a bowl. Rub in the butter or margarine. Add the sugar, then mix to a dough with the bicarbonate of soda mixture and syrup.
Roll the mixture into walnut sized balls and place them on greased baking sheets. Press down the centre of each ball with your thumb.
Bake in a preheated moderately hot oven (200C/400F/Gas Mark 5) for about 10 minutes.
