Old Fashioned Pimento Cheese Spread

Tangy cheese spread--easy to make and keeps well. Using mustard instead of mayo eliminates the sweet taste of store-bought pimento cheese. This recipe comes from my grandmother.

Kraft Deluxe American cheese block
Yellow mustard
Jar of diced pimentos


Grate cheese. Amount can vary from single serving to whole block.

Add milk a splash at a time. Add mustard a dollop at a time to taste. Stir between additions. Keep adding milk until desired consistency is reached (spreadable--not soupy or stiff). Keep adding mustard until desired tang is reached. If you end up with too much milk or mustard, grate more cheese.

Add pimentos to taste.

Serve as a sandwich or with crackers.

To use leftovers, remove from fridge to warm to room temperature. Add a splash of milk and stir to remove stiffness.
