Apple Carrot Crunch Salad

4 carrots grated
4 apples cut into chunks
2 tbsp parsley
1/2 cup roasted pecans (in frying pan or oven, does not take more than 8 minutes at the outside)

2 tbsp maple syrup
1 tbsp lemon juice
1 tbsp olive oil
Pepper to taste


Add shredded carrots, chopped apples, chopped parsley and roasted and cooled pecans in a bowl. Mix in dressing.
