~1 lb of boneless, skinless chicken breast cut into strips
1 cup flour
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon paprika
1 teaspoon cayenne pepper
1 teaspoon salt
Place chicken in a bowl with buttermilk, let soak for 10-15 mins. Add enough buttermilk so that the chicken is completely covered by it.
Place a skillet/pan on the stove over medium heat. Add about 1/4 to 1/2 inch (depending on the thickness of the chicken strips) of cooking oil to the pan. Add a glob of butter to the oil and let melt while preparing chicken.
Combine flour, onion powder, garlic powder, paprika, cayenne pepper, and salt in a dish and mix together.
After chicken has soaked in the buttermilk, coat each side of the strips in rub mixture and place in pan and cook. Fry on each side until done.
