1/2 package baconI use about 3/4's of the package)
1 square cream cheese
1/2 cup mayonaise
2 cups shredded sharp cheddar cheese
1/2 bunch of green onion- chopped
1 cup cracker crumbs ( i process them in my food processor)
Reserved bacon drippings
"Scoops" or your favorite cracker. I'm a Ritz fan myself.
Fry bacon until almost crispy and set aside. reservesome drippings for later.
Mix softened cream cheese and mayo well. Add tbls of bacon drippings and mix until creamy.
Add cheddar and onions and stir with woden spoon.
Pour into 8x5 baking dish( cast iron retains heat better for longer serving).
In food processor , process the cracker crumbs with the bacon and 1 tbls of drippings. Blen until bacon is pea-sized. Scatter evenley over the cheese mixture in pan.
Cover with foil and bake at 350 degrees for 20-25 min. Serve hot with your favorite crackers.
