Feijoada de frango

Another favorite Portuguese stew.

Preparation time:
Cooking time: 1 1/2 hours



On medium chicken (1 kg)
On spanish onion, sliced.
1 litre tomato paste
1/2 cup of olive oil
1/2 cup Madeira wine
One can of Okra Beans
two tablespoons of sugar
1 sprig of Peppermint
salt and pepper


Heat oil in a big pot on high. Place cleaned chicken in the pot and turn to brown all sides. Add tomato sauce, equal amount of water, peppermint and sugar. Let boil for an hour or until the chicken is starting to fall off the bones. Fry the onions and beans and mix with the chicken.
