Grilled Chicken Kabobs with Italian Sausage

Light and tasty, this is a perfect summer dish! No heavy sauces or overwhelming spices in this recipe, just fresh off-the-grill taste!

Ingredients

3 boneless, skinless chicken breasts
5 sweet Italian pork sausages
1 red bell pepper
1 green bell pepper
1 red (salad) onion
1/2 cup extra virgin olive oil
1/2 of a fresh lemon

Method

Slice chicken into 1 inch chunks. Cut sausages into fourths. Chop the two peppers and the red onion into chunks that are about the same size as the chicken. Use metal skewers (if using wood or bamboo, soak them first for 1/2 hour) and alternate threading the chicken, peppers, sausage and onion. Drizzle with olive oil followed by squeezing the lemon half over the kabobs. Arrange on a pre-heated grill set to medium-high heat. Cook about 10 minutes on one side then turn the kabobs to cook for another 10 minutes or until done. Use tongs to handle the skewers on the grill and to remove the cooked items to a platter. Serve with a side of rice and a cold salad of sliced cucumbers and avocados.
