Parmesan Chicken Orzo

3 tbs butter
2 cups uncooked orzo pasta
2 (14.5 oz ea.) cans chicken broth
1 cup grated Parmesan
1/2 cup chopped basil
salt and pepper
4 tbs chopped basil
2 lbs chicken, cubed
1 cup sliced mushrooms
10 oz chopped spinach


Melt butter in heavy skillet over medium-high heat. Stir in orzo and saute until lightly browned. Stir in chicken stock and bring to boil. Cover. Reduce heat and simmer until orzo is tender and liquid is absorbed, about 15-20 minutes. Meanwhile, brown chicken and saute mushrooms and spinach in garlic. Mix in Parmesan, basil, chicken, and veggies. Season with salt and pepper. Garnish with basil.
