Goat Cheese & Mango Quesadillas

Ingredients

2 mangos
8 large flour tortillas
7 oz / 200g goat cheese (or more, to taste)
cayenne pepper

Method

Peel and slice mango into thin, flat slices.

Spread goat cheese on one side of each tortilla.

Distribute the mango onto 4 tortillas. Sprinkle each (sparingly, until you discover how much suits you) with cayenne. 'Sandwich' each by placing another tortilla on top (goat cheese side down).

Warm each quesadilla in a large, dry saucepan on medium heat, browning just very lightly on each side (flip carefully to avoid losing ingredients).

Slice each quesadilla into 4 or more pie-shaped pieces and serve warm.
