Dietary guidance: v
For the paste (this is really easy):
90g unsalted Cashew nuts (can use other unsalted nuts like walnuts or pistachios)
75g of sultanas (raisins or dried apricot work too)
3 Cloves of garlic roughly chopped
20g fresh ginger roughly chopped
1-2 tsp of chilli powder (or use fresh - or none!)
1 tsp cumin powder
1/2 tsp Turmeric
For the rest:
Onions (how ever many you want)
Meat (if using)
700ml of water
Any veg you want to put in. Great for using up what you have left in the fridge.
Boil the cashews in water for 5 mins to soften
Add to the rest of paste ingredients and blitz with a blender (get yourself a hand blender if you don't have one - they rock!)
Now taste that beauty - its the bomb!!
And easy too!
You can adapt this by adding coriandor/garam massale etc.
To make the curry:
- Fry your onions for a few mins until soft
- Brown your meat if using
- Pour in the paste
- Add 2 tblsp of water & fry for 3mins
- Pour in the rest of the water
- This will now take about 20/25 mins to make a nice sauce. Add the veg in when suitable.
Eg, if using potatoes put them in soon(also carrots etc), if using veg that needs less cooking put them in with 10 mins to go (courgette, chard, spinach etc)
Serve with Rice
Would also suggest some nan bread to mop up all that tasty sauce!
