1 extra ripe avocado
2 tbsp fresh lemon juice
1/2 tsp salt
1/8 tsp cayenne pepper
8 slices turkey bacon
8 slices whole-wheat bread
8 leaves romaine lettuce
2 medium tomoatoes, cut into 12 slices
1 small red onion, thinly sliced
1. Combine spread ingredients n a bowl; smash until smooth and set aside.
2. Prepare bacon as directed, draining thoroughly on paper towel.
3. Toast bread; place 4 slices on 4 plates.
4. Evenly spread an equal amount of spread on each of the four slices. Top each with 1/4 of the bacon, lettuc, tomato, & onion. Cover with other slice of toasted bread.
