2 cups of flour (bread flour is good as well as all purpose flour)
1/4 cup veg. shortening, cut into pieces
3/4 tsp. baking powder
3/4 cup warm water
In a food processor with kneeding blade attached, add flour, salt, baking powder and shortening. Blend until it resembles fine meal.
Add warm water a little at a time to flour mixtures and blend until incorporated into a nice ball until smooth and elastic. Water amounts will vary with different flour and the weather.
Divide dough into 12 smaller balls or 8 larger balls. Cover and let rest for at least 30 minutes.
Roll each ball of dough on a floured surface to make a thin tortilla. Place in a pre-heated cast iron skillet and cook until lightly brown -- and big air bubbles apear. Turn over and cook for another minute.
Remove from pan and put in between a towel to cool.
