Strawberry Cake

1 small box strawberry jello (dry)
1/2 c. strawberry juice
1/2 c. strawberries, well-drained
1 box white cake mix
4 eggs
1 c. cooking oil


1 stick margarine, softened
1 box sifted powdered sugar
1/4 c. strawberry juice
1/2 c. strawberries, well-drained


Soften jello in the strawberry juice. Empty cake mix into large mixing bowl. Add eggs, oil, and softened gelatin. Beat 4 minutes at medium speed. Add strawberries. Pour into 9x13" baking pan. Bake in 350 degree oven for 35-40 minutes. Remove and cool.

Blend margarine with the powdered sugar. Add strawberry juice gradually to get to spreading consistency. Spread on cake, decorating with well-drained strawberries.

VARIATION: If using frozen strawberries, add 1/2 cup water and 1 Tbsp. flour to cake batter.
