Dietary guidance: v
500g fresh mushrooms
250ml olive oil
125ml wine vinegar
½ tsp salt
3 black peppercorns
½ tsp dried tarragon
1 green pepper, seeded and sliced
Wash and slice the mushrooms.
Combine the olive oil and vinegar, add the salt, peppercorns and tarragon.
Marinate the mushrooms in this for a few hours.
Drain the mushrooms and arrange on a plate.
Garnish with the sliced green pepper and sprinkle with a little of marinade.
Season with salt and pepper. Fantastic lunch or snack!
