Ginger Pudding

120g whole wheat flour
2ml cinnamon
1ml nutmeg
5ml bicarbonate of soda
2 eggs, beaten
20ml margarine, melted
2ml salt
2ml ginger
1ml mixed spice
250ml skim milk
2ml vanilla essence
4 tsp sugar


Mix all dry ingredients together.

Mix milk, eggs and vanilla together and add to dry ingredients.

Spray a small bread pan with non-stick and pour mixture into pan.

Bake for 40 minutes, 180°C.
