1 16-oz can of chickpeas (garbanzo beans)
1 large chopped onion
3-4 tbs chopped fresh parsley
2-4 tbs chopped fresh cilantro
2-4 cloves of garlic
1 tsp coriander, ground
2 tbs cumin
1 tsp lemon juice
1/2 tsp chili powder (optional)
1/2 tsp baking powder
salt and black pepper to taste
oil for frying
1. In a large bowl or food processor, combine all ingredients. Mash or process the chickpeas until a thick past (not too smooth) is formed.
2. Take spoonfuls of the mixture and form into balls about an inch in diameter, and slightly flatten them.
3. In a pan, heat 2 inches of oil. Carefully place the falafel into the oil, and fry until golden brown (this should take 5-7 minutes).
Serve with tahini, amba (picked mango or mango chutney), and other condiments in a pita, or plain.
