750 g waxy potaotes, peeled and cut into 5 mm slices
250 g tomatoes, coarsely chopped
1 large onion, coarsely chopped
chopped fresh herbs ( parsley, basil, chives, sage) , about 1/2 tablespoon each, but follow your taste
3 T extra virgin olive oil
freshly ground black pepper
sea salt to taste
Preheat oven to 240°C.
Put all the ingredients into a roasting pan and mix well with your hands. Bake for about 1 hour or until the potatoes are cooked.
Enjoy. Even better, get a glass of red wine with it!
