Pork red braised with shiitake and ginger - Nigel Slater

a thumb-sized length of ginger
2 cloves of garlic
100g shiitake mushrooms
500g belly pork
groundnut oil
1 medium to large onion
500ml stock
1 flower of star anise
1 tbsp dark soy sauce
2 tbsps rice wine
3 tbsps soft brown sugar
steamed pak choi, to serv
