Kathy's Oatmeal Pancake's

1 1/2 c rolled oats
2 c buttermilk
2-3 eggs
2 T brown sugar
1/4 c canola oil
2 t vanilla
1/2 c whole wheat pastry flour
1/4 t baking soda
1/4 t salt
1/3 c flax seed


soak 1 and1/2 C rolled oats in 2 C buttermilk for 20 minutes.Combine 2 eggs (or 3 if you want more protein), 2 Tbps. brown sugar, 1/4 C canola oil (or melted unsalted butter) and 2 tsp vanilla. Add to oats & milk. Then add 1c whole wheat pastry flour (white flour would work too) you can add more if the batter looks too runny, 1/2 tsp. baking soda, lots of cinnamon and 1/4 tsp salt. I also add 1/3 C flax seed meal (the small child needs some form of nutrients in her breakfast). They take a little longer to cook because they are so dense. Let me know if you try them.
