Ginger-Lime Cookies

Ingredients

¾ cup sugar
¼ vegan margarine, softened
¼ cup vegetable oil
¼ warm water
¼ cup crystallized ginger, chopped
1 Tbs. blackstrap molasses
1 Tbs. vanilla extract
1 cup whole wheat flour
1 cup unbleached flour
1 tsp. baking soda
¼ tsp. salt
½ - 1 cup finely chopped walnuts
4 ½ Tbs. lime juice
3 cups confectioners’ sugar

Method

1. Preheat oven to 375. Coat baking sheets with cooking spray. Whisk together sugar, margarine, oil, ginger, molasses, vanilla & water. Combine flour, baking soda & salt in separate bowl. Stir flour mixture into sugar mixture. Fold in walnuts.

2. Drop spoonfulls of dough 1 inch apart onto prepared baking sheets. Bake 10-12 minutes. Cool 3 minutes, then transfer to wire rakcs to cool completely.

3. Whisk lime juice & sugar until smooth. Dip cookies in glaze. Let glaze harden on wire racks, then store cookies in airtight container.
