Moroccan Vegetable Stew

1T olive oil
3 shallots, chopped
1 lg carrot, chopped
1 sm red bell pepper, seeded and chopped
1 clove minced garlic
1t minced giner
1/2t ground cinnamon
1/2t ground cumin
1/4t paprika
1/4t turmeric
8oz green beans, trimmed and cut into bite-size pieces
1 can chickpeas
1 can diced tomatoes
1-1/2c vegetable stock
1/2c frozen peas
1/2c mixed dried fruit (apricots, raisins, apples)


put all ingredients except peas and dried fruit into crockpot, cover and cook on low for 6 to 8 hours. 20 minutes before serving, add peas and fruit. Serve over cous cous.
