Grits Casserole

If you're looking for low fat...this is not the recipe for you! It is so wonderful, though! It is one of my daughter's favorites!

1 cup grits, uncooked
1 teaspoon salt
4 cups water
1/2 cup butter
1/4 pound Velveeta cheese, cubed
1/4 pound sharp cheese, grated or cubed
3 eggs, slightly beaten
1/3 cup milk


Cook grits in salted water until done. Then add butter, cheese, eggs and milk. Stir until melted and smooth. Place in a greased 1-1/2 quart casserole dish.

Bake for 1 hour at 325-350F.

(Can be doubled. Place in 9x13 dish then bake.)
