Lemon Pound Cake

3 cups flour
1 tsp. baking powder
1/4 tsp. salt
2 3/4 cups sugar
1 1/4 cups butter (Softened)
1 tsp. lemon extract
5 eggs
1 cup evaporated milk
2-3 tsp. lemon zest (2 lemons)


Heat oven to 350. Grease & flour 12 c. bundt pan. Mix flour, baking powder, and salt - set aside. Beat butter, sugar, lemon extract & rind, and eggs in a large bowl with an electric beater on low for 30 seconds, and high for 5 minutes (scrapping bowl). Beat in flour alternately with milk on low speed, beginning and ending with flour. Pour into pan. Bake 1 hour 10 minutes or until toothpick inserted in center comes out clean. Cool 20 minutes, then remove from pan and cool on wire rack.

Glaze with 4 tbsp. lemon juice and 1/4 cup granulated sugar.
