Dietary guidance: v v
3/4 pound fresh, young okra
3 tablespoons vegetable oil
1 medium red onion, finely chopped
1/8-1/4 teaspoon turmeric powder
1/4-1/2 teaspoon brown mustard seeds
1/2-3/4 tablespoon red chilli flakes
salt to taste
2-4 ounces fresh lime juice
Wash and thoroughly dry the okra.
Cut okra in approximately 1/2-3/4 inch thick slices
Heat oil in medium frying pan, wok, or paella pan on high heat.
Add onion and fry for 1 minute.
Add okra. Cook 3 minutes, stirring occasionally.
Add turmeric, mustard seeds, and chilli flakes.
Reduce heat to low.
Cook for 3-4 more minutes.
Remove from heat and add 2 ounces lime juice. Adjust salt.
Add additional lime juice to taste.
