Quick and Easy Quiche

This is a quick and easy quiche that I make often. It's great for using up left over bits in your fridge and it has a lot of wiggle room for ingredients and quantities. The quantities listed below are estimates in the extreme.

Ingredients

2 c. Ham (or any leftover meat)
4-6 Eggs (depending on size)
1 c. Milk or Soy Milk
Several c. shredded Cheddar Cheese
1 Frozen Pie Crust

Method

1.) Cut up meat into small pieces.
2.) Mix eggs, and milk gently in a bowl. The consistency should be mostly eggs.
3.) Fill frozen pie crust with meat, egg & milk mixture. The pie crust should be almost filled but not quite to the top. As it cooks it will rise.
4.) Cover the top with cheese.
5.) Bake according to the instructions on the pie crust or until it is no longer runny when you poke it with a toothpick.

I've done this with baked ham, lunchmeat ham, bacon, vegetables...all sorts of things. Experiment and enjoy!
