1- 2TBS red or brown miso
hot water or stock
2-3 garlic cloves, minced
green onions (optional)
cubed tofu (optional)
Grated fresh ginger( optional)
Heat water in a teapot.
Once it boils, remove from heat, pour in bowl and let it stand for a minute.
Add miso and stir until it is all dissolved.
add garlic and ginger to taste. Cut up green onions with scissors to your liking (white and green parts). Add tofu if you like.
This is really simple but easy to make. Great served with sushi rolls or a rice dish.
We ALWAYS make this when we're sick. It's like the vegetarian version of chicken soup, but way better tasting (at least to me!) and it takes like 5 minutes!
