3 15-oz cans chickpeas
1/4 cup sesame tahini
1/4 cold water
1/4 c fresh lemon juice
3-4 cloves garlic, chopped
1 tablespoon extra-virgin olive oil

1. Drain, rinse, and peel chickpeas.
2. Blend chickpeas, water, and lemon juice in blender. Add tahini and garlic and blend until smooth.
3. Scrape the mixture into a bowl. Store in fridge for at least and hour.
4. Just before serving, stir in the olive oil and garnish with some chopped fresh parsley, Kosher salt, and cracked black pepper.
