spanish-ish chicken in chocolate sauce

Serves: 2-4


4 chicken thighs with skin and bones
2 tbsp olive oil
Salt, Pepper, Cumin, and Paprika to season chicken
1/3 cup chopped onion
1/3 cup chopped carrot
1/3 cup chopped celery
1 1/2 inch of a link of hard spicy chorizo sliced thinly
3 cloves of roasted garlic mashed into paste
1 sprig of thyme
1/2 cup of dry red wine
1/2 cup water
1 1/2 tsp unsweetened chocolate chopped finely
1 1/2 tsp honey
pat of butter
2 tsp of parsley


take chicken thighs, and season on both sides with salt, pepper, cumin, and paprika. Wrap and set in fridge for about one hour, so flavors can meld. After one hour, remove chicken from fridge, and start two skillets with a little oil over medium heat. Use oven safe skillets. Additionally, preheat oven to about 400 degrees. To one skillet, add carrots, onion, and celery. After 4 minutes, put chicken thighs skin side down into the second skillet with oil. After about five minutes, turn chicken over, and let sit about 2 more minutes. After that, add vegetables from first skillet, and the roasted garlic paste into the skillet with the chicken, then stir in the wine and water with a wooden spoon to deglaze the pan. Raise the heat to medium high, and boil for about two minutes. Add a sprig of thyme to the skillet, and transfer this skillet into the oven. After about 15 -20 minutes, remove the skillet from the oven, and if it is at the right internal temp, atleast 165 degrees, preferably 170ish, set it aside to rest. return the skillet to the stove top at medium high, and reduce sauce by about a third. Once that is accomplished, remove sauce from heat, add chocolate, and honey, and remove the sprig of thyme. Once the chocolate and honey are dissolved, add the pat of butter, and stir until combined.
To plate, pour sauce and vegetables onto the plate, then lay chorizo slices in the sauce. Next, place the chicken on top and add parsley, then serve immediatley.
