Hearty Chicken Alfredo

Linguine Chicken Alfredo with broccoli, bacon and chicken.

Serves: 4-6


1 regular Sized box of Linguine Pasta
1 Pint of Heavy Cream
8 oz Parmesan Cheese
Dash of Garlic Salt with Parsley Flakes (to taste)
1/2 Package of Bacon
3-4 normal to small thawed chicken breasts boneless skinless
1 regular sized package of frozen broccoli (about 3 cups)


Boil water to cook linguine according to package instructions.
Boil water to cook broccoli according to package instructions.
(You can start these at the same time and let them cook while you prepare everything else.)
Slice the 1/2 package of bacon into little pieces about 1/2 inch by 1/2 inch. This is much easier if the bacon is not frozen. Put the chunks in a large skillet over medium to medium high heat and stir occasionally.
While the bacon is cooking you can start the chicken. Get another skillet for the chicken and place the chicken in the pan over medium to medium high heat and leave alone. These should be thawed out.
Once the bacon is darker and partially crispy but still very chewy, remove from pan onto a plate with a paper towel to soak up excess fat.
In a small saucepan over medium heat, heat 2 tablespoons of butter or margarine. (Here is a great secret!!! I use about two tablespoons of the left over bacon fat and put it in with the butter for a delicious taste!) Once the butter is melted with the bacon fat, add the heavy cream. Stir with a whisk. Gradually add the parmesan cheese to the mixture while stirring. Add the garlic salt and a little pepper if you like. Keep an eye on this while occassionally stirring until you can see it start to boil. Keep it to a low to medium heat so it does not burn.
Turn the chicken breasts when you see they have cooked through at least halfway. Fewer flips makes juicier chicken! When they are cooked cut them into pieces about an inch by 1/2 inch or so.
Once the pasta is cooked (to your liking.. slightly al dente is nice for this dish) pour into strainer over sink. Then you can pour the broccoli into the same strainer since it is all going together anyway. The broccoli should be done around the same time as the pasta.
Mix the broccoli, pasta, chicken and bacon in a large pan or bowl. Once it is mixed add the home made alfredo sauce and mix until everything is coated.
