Jamaican Rice & Peas

100ml coconut milk
200g can kidney beans
250ml rice
1 clove garlic (minced)
1 chilli pepper (minced)
1 onion (chopped)
1 tsp dried thyme


Combine juice from kidney bean tin with coconut milk and add enough water to make a 250ml mixture

Add coconut mixture to a pan with beans, onion, garlic, chilli and thyme

Boil for around 20 mins (until the rice is cooked and liquid fully absorbed)
