Ingredients

CRUST
1 cup all purpose flour
2 TB-spoon Sugar
1/2 tspoon baking powder
1/4 tspoon salt
1/3 cup butter or margarine
2-3 TB-spoon milk

FILLING
1 1/2 lb cream cheese
1 1 /4 cups sugar
5 eggs
1 1/2 tspoon Vanilla
3/4 tspoon lemon rind

Method

pre-heat oven to 350 F

FOR CRUST
In large bowl, combine first 5 ingredients; blend together until crumbly. Sprinkle milk over mixture; stir until dough is just moist enough to hold together. Form dougj into ball. Press misture evenly over bottom and 2 1/2 inches up sides of ungreased 9 in. Wilton Springform pan. Chill.

FOR FILLING
In large mixing bowl, beat together cream cheese and sugar until light and fluffy. Add eggs, one at a time; beat thoroughly after each addition. Add vanilla and lemon rind. Blend until mix.

Pour mixture into prepared crust and bake for about 55-60 min, just until center is firm to touch. Remove cake from oven and cool to room temperature, Chill until serving time. Add fruit topping if desired. Released sides of pan and leave on bottom to serve.
