Pasta with bacon and tomato

500g pasta linguine or spaghetti best but any is ok..
3 teaspoons crushed garlic
400g can diced tomatoes
1/4 cup olive oil
1 cup white wine
handful chopped parsley
3 pieces bacon chopped or 6 pieces short cut bacon chopped.
1 tablespoon cream
sea salt , cracked pepper to taste
1/2 teaspoon dried chilli flakes


While pasta is cooking according to packet directions....

Heat oil in large frypan.
Add garlic and bacon and fry for 2-3 min.
Add the parsley and white wine.
Once white wine evaporated add tomatoes and chilli.
Cook covered for 10 min . Add salt pepper to taste. Stir through cream.

When pasta cooked drain and rinse with cold water to stop cooking process.Darin well (this stops it from absorbing all the liquid from the sauce!!)

Toss pasta through sauce. Serve with shaved parmesan cheese.

Can be cooked the same without bacon if making for a vegetarian but not as tasty!
Another yum variation is to substitute 1kg fresh mussels (in shells)
Add at the same time as tomatoes and chilli. cook until shells all open.
Have also cooked with 500g green prawn tails. excellent!
