Preparation time: 20 minutes
Cooking time: 15 minutes

Serves: 4-8

2 cups of small pasta shells
1 med block of velvetta cheese
1 jar of spaghetti sauce w/meat
1 sm pack of sliced pepperoni
1lb lean ground beef or turkey
1/2 cup of diced onion
1/2 cup of red or green bell pepper
1 small can of sliced mushrooms (optional)
1 small can of sliced black olives (optional)

Boil pasta shells until tender. Drain and pour into a 9x13 baking dish. Brown the ground beef, drain, and add to the pasta shells. Add 1/2 the sliced pepperoni's to the pasta and ground beef. Next add the onion, bell pepper, mushrooms, olives, or other ingredients you may want to add. Then pour the spaghetti sauce over all the ingredients and then with a large spoon mix well and spread the mixture out evenly in the baking dish. Next take the velvetta block cheese and slice it into squares 1/4 inch thick. Use additional slices of the cheese to fill in the gaps...what you want is the entire top of the casserole to be covered with a 1/4 inch layer of cheese. Finally top of the casserole with the remaining pepperoni. Place in an oven preheated at 375 and let bake for 15 minutes or until the cheese has melted evenly. Serve hot with garlic bread and a salad.
