1 tablespoon peanut oil
1 tablespoon whole mustard seed
1 tablespoon garlic, minced
1 cup onion, minced
1 tablespoon ginger, grated
4 chipotles, deseeded, chopped, soaked and drained
1/4 cup raisins
1/4 cup apple-cider vinegar
1/4 cup dark brown sugar
2 tablespoons molasses
1/4 teaspoon coriander
1/4 teaspoon nutmeg
1/4 teaspoon allspice
15 habaneros, deseeded, chopped
4 red New Mexico chiles, deseeded, chopped, soaked and drained
1/4 cup pineapple juice
1 tablespoon sea salt


Heat oil in large, heavy skillet. Add mustard seed; sauté until seeds start popping. Add garlic, onion and ginger; sauté until onion softens. Add chipotles; sauté until chiles soften. Add remaining ingredients. Simmer for about 15 minutes until well blended. Adjust seasoning to taste. Purée in food processor. While processing, add more pineapple juice until desired consistency is achieved. Cool in ice bath and bottle, or preserve while hot.
