Co-Co-Van - Audra style

Difficulty: Easy - for beginners
Serves: 4


4 Lg chicken breasts with bone, skin removed, seasoned with Salt and Pepper
5-6 Lg Carrots, pealed and sliced in large chunks
1 bag of Pearl onions, pealed and sliced in half
5 stalks of celery, sliced in large chunks
1 container of button mushrooms - leave whole
1 Large sprig of FRESH Rosemary - leave whole
5 small springs of Thyme - leave whole
1 lb bacon, cut up OR 1 package breakfast sausage leave whole (can use Turkey bacon too)
2 C. Chicken stock
1 1/2 C. cheap red wine (can use white wine if you don't have red)


Brown the chicken in a very hot pan with a bit of olive oil. Be careful when heating the pan - if you get the oil to flash point it can get interesting! (Always make sure the pan is good and hot before putting in the chicken or you will boil it in it's own juices instead of browning it!)
When browned add the bacon or sausage. Cook for 3 minutes. Add all the rest of the veges and the sprig of Rosemary. Dump in Chicken stock and Red wine. Cover pot and bring to a boil. Reduce and simmer for 35 minutes. Take lid off and let broth reduce for another 10-15 minutes or until chicken is done. Take out Rosemary stem. Serve with crusty bread to sop up all the juices. Delish!
