Middle Eastern salad, great with BBQ beef and chicken, or on it's own

½ cup bulgur
4 tomatoes, seeded and
5 green onions, chopped
3 large cloves garlic, minced
3 bunches chopped fresh parsley
1/4 cup fresh mint leaves
2 teaspoons salt
Juice of 2 fresh lemons
2/3 cup olive oil


Quickly stir fry bulger wheat in 2 Tbsp olive oil until smells nutty and lightly browned and split.
Place cracked wheat in bowl and cover with 1 cups boiling water and ½ cup lemon juice Soak for 30 minutes; drain and squeeze out excess water.
In a mixing bowl, combine the wheat, tomatoes, onions, garlic, parsley, mint, salt, lemon juice, and olive oil. Toss and refrigerate for at least 4 hours before serving. Toss again prior to serving.
