Crab Cakes

Serves: 4-6


1/2 C crushed cracker crumbs
1 lb Lump Crabmeat, no shells
1 tbsp mayonnaise
1 tbsp. whipping cream
1 tbsp. mustard,Ii use Dijon
1 egg, beaten1 tbsp minced parsley
1 tsp. white pepper
1/2 tsp. salt
1/2 tsp. Worcestershire sauce
3 tbsp. butter
3 tbsp olive oil


Mix crumbs into crabmeat. combine mayo, whipping cream, mustard, egg, parsley, pepper salt and Worcestershire sauce. Add add to crabmeat, stirring to blend. Shape into patties, being careful not to break up crabmeat chunks. Heat butter and olive oil in large skillet, lay patties in butter and oil, saute til crips and brown all over, about 3 minutes per side. Add more butter and olive oil if needed.,
