Sugar Crusted Lime Cake

Cake (or use any cake mix)
2 egg whites, room temp
1/2 t baking powder
1 c all-purpose flour
3/4 c sugar
1 T grated lime peel
1 t. baking powder
1/4 t. salt
1/3 c milk
1/4 c shortening
2 T lime juice

1/4 c sugar
1 T lime juice


1. Heat oven to 350. Spray 9 inch round cake pan. Sprinkle lightly with flour.
2. In small bowl, combine egg whites and 1/2 t. baking powder; beat until stiff peaks. Set aside.
3. In large bowl, combine flour & all remaining cake ingredients; beat at low speed until moistened. Beat 2 minutes at medium speed. Gently fold into batter. Pour into pan.
4. Bake at 350 for 27-35 minutes or until toothpick inserted in center comes out clean.
5. In small bowl, combine topping ingredients; spread over HOT cake. Cool cake in pan on wire rack for 30 minutes.
