1/4 cup salad oil
1 egg, beaten
1/2 cup milk
1 1/2 cups flour
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 to 1 cup chopped nuts (optional)
1 can sliced peaches
Combine oil, egg and milk; set aside. Sift dry ingredients; add to liquid ingredients. Pour into well greased 9x9" pan. Arrage peach slices on top and press them into batter slightly. Sprinkle with cinnamon/sugar. Bake @ 375 for 25 minutes.
(We have to double this recipe for our large family...then bake in a 9x13" or 10x14" pan. May need to bake a few more minutes.)
Instead of peaches, combine 1/4 cup brown sugar, 1 teaspoon butter, 1 teaspoon cinnamon and 1 tablespoon flour. Mix until crumbly. Sprinkle over top of batter and bake. May also add raisins.
We like to use cans of pie filling...like apple or cherry pie filling instead of the peaches. Sprinkle with cinnamon/sugar, then bake. This is our favorite way to have this recipe.
