Peach Coffeecake

This is a quick, very versatile coffeecake. It is easy to mix up then get into the oven while you take your shower, or sit with a cup of coffee waiting for it to finish. A family favorite!

Preparation time: 10-15 mins
Cooking time: 25 mins

Serves: 4-6


1/4 cup salad oil
1 egg, beaten
1/2 cup milk
1 1/2 cups flour
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 to 1 cup chopped nuts (optional)
1 can sliced peaches


Combine oil, egg and milk; set aside. Sift dry ingredients; add to liquid ingredients. Pour into well greased 9x9" pan. Arrage peach slices on top and press them into batter slightly. Sprinkle with cinnamon/sugar. Bake @ 375 for 25 minutes.

(We have to double this recipe for our large family...then bake in a 9x13" or 10x14" pan. May need to bake a few more minutes.)

Instead of peaches, combine 1/4 cup brown sugar, 1 teaspoon butter, 1 teaspoon cinnamon and 1 tablespoon flour. Mix until crumbly. Sprinkle over top of batter and bake. May also add raisins.

Other Variations:
We like to use cans of pie apple or cherry pie filling instead of the peaches. Sprinkle with cinnamon/sugar, then bake. This is our favorite way to have this recipe.
