1 pound pasta -penne or orzo
1/3+ cup chopped sun dried tomatoes (include some of the oil)
5 T olive oil
1/4 cup balsamic vinegar
1/4 cup+ chopped pitted Kalamata olives
1/4 cup capers
1/2 cup toasted pine nuts
1/4 - 1/2 cup chopped basil
1/2 grated Parmesan cheese
2-3 large garlic cloves, minced
Salt and pepper to taste


Cook the pasta, drain and add the tomatoes, oil, vinegar, olives and capers. Mix and let stand to cool. This part can be made ahead and refrigerated. Bring to room temp before continuing. Add the remaining ingredients right before serving.
