Holly's Best Ever Sausage Potato Soup

Serves: 6


1/2 pound fully cooked kielbasa or Polish sausage, diced
3 cups cubed peeled potatoes
2 cups frozen corn
1 can chicken broth
1 celery rib, sliced
1 carrot, sliced
1/2 c. chopped onion
1 T. dried parsley flakes
1/2 t. salt & pepper
3 T all-purpose flour
3 c. milk
1 can cheddar cheese soup
shredded cheddar cheese and chopped green onions


In a large saucepan, brown sausage; drain. Set sausage aside. In the same pan combine potatoes, corn, broth, carrot, celery, onion, parsley, salt and pepper. Cover and simmer until potatoes are tender, about 15 minutes. Combine flour and milk until smooth; add to soup. Bring to a boil; boil and stir for 2 minutes. Add cheddar cheese soup. Stir until blended. Add sausage. Garnish with shredded cheese and green onions if desired.
