Very Cherry Cake

Dense and moist, this cake is very cherry and textured like an heirloom type cake but without all of the work!

Cooking time: 1-1.5 hrs

1 Box white cake mix
3 large egg whites, room temperature
1-1/2 C Maraccino cherry juice
3/4 C Vegetable oil
1 C Maraccino cherries, chopped

Almond Buttercream Icing:
1 C Butter
1 C Crisco
2-4 T Milk
1-1/2 Boxes powdered sugar
2 tsp Almond extract


Preheat oven to 350.
Prepare cake mix per box instructions substituting maraccino cherry juice from jar for water. Remove stems and chop maraccino cherries. Add to cake mix.
Grease and dust cake pan(s) and pour batter.
Bake until tooth pick inserted in center comes out clean.
Cool on wire rack.

Almond Buttercream Icing:
Cream butter and Crisco until smooth. Add powdered sugar alternating with milk until desired consistency is achieved. Add almond flavoring.
