Tomatillo Crock Pot Chicken

Ingredients

2 jars of Green Salsa * hot or mild..personally I make every thing spicy

4 Skinless Chicken Breasts (so basically 1 jar for every 2 breasts)

2 small cans of chopped green chilis

Method

*yields 6 people

2 jars of Green Salsa * hot or mild..personally I make every thing spicy

4 Skinless Chicken Breasts (so basically 1 jar for every 2 breasts)

2 small cans of chopped green chilis

-cook chicken breast through in skillet (or bake, or even grill)

Put cooked chicken breasts in crock with jars of Green Salsa and 2 small cans of chopped green chilis

*Cook on high for 2 hours
I Take 2 forks or something long and shred chicken until it almost becomes chunky/shredded chicken soup like consistency.

Once it starts to get a little brown on the sides of the crock, turn to low..or even off.(if you've owned a crock you will know when it's done)

You can eat it a vareity of ways..

1. *My favorite***
w/ corn or flour tortillas, fish out pieces of chicken into tortillas, top with low fat sourcream, fresh cilantro, fresh finely chopped onion..that's it!

2. in a bowl alone as a soup topped with sour cream ....or use as a dip with tortilla chips

***side note, the sourcream is a must, makes it taste similar to sourcream chicken enchiladas...
