Fried Brown Rice with Sauteed Kale

Olive oil
3 cups fresh kale, washed, with tough stems removed, roughly chopped
2 cloves garlic, minced
1 Tbsp grated ginger
2 bunches green onions, chopped, tender parts only
1/2 orange bell pepper, sliced
1 1/2 cups precooked, chilled brown rice
1 Tbsp soy sauce
1 Tbsp lime juice
1 tsp sugar
1/2 jalapeno, chopped
2 Tbsp fresh cilantro, chopped
1 beaten egg (optional)


1. Saute kale in olive oil, set aside
2. Mix soy sauce, lime juice, sugar and jalapeno, set aside
3. Add garlic and ginger to oil over medium heat, fry a few minutes, until golden (careful- may splatter)
4. Add onions, fry for a few minutes
5. Add bell pepper and kale, fry for a few minutes until pepper is soft
6. Add rice, stir to coat and fry for a few minutes
7. Add soy sauce mixture, cook for a few more minutes
8. If using, pour the beaten egg into a clear spot in your pan, allow to set, then break up and stir into the mixture
9. Add cilantro, stir and serve
