8 chicken thighs (about 2 lbs.)
6 small red or Yukon Gold potatoes, quartered
1 large onion, cut in 1" pieces
1/2 cup extra-virgin olive oil, or as needed
1 tablespoon chopped fresh* rosemary
1 1/2 teaspoons chopped fresh or dried oregano
1 1/2 teaspoons minced garlic
1 1/2 teaspoons lemon juice
1 teaspoon Worcestershire sauce
salt and freshly ground black pepper to taste
*This is one recipe where you don't want to substitute dried rosemary. It won't have nearly the same flavor!
1. Preheat the oven to 375 degrees F (190 degrees C).
2. Mix oil, rosemary, oregano, garlic, lemon juice and Worcestershire sauce in a large bowl.
3. Add chicken, potatoes and onion. Stir to coat with the oil mixture.
4. Pour into a large baking dish. Sprinkle with salt and pepper.
5. Bake 1 hour, uncovered.
