Aunt Janice's Chicken Rice Salad

A delicious whole-meal salad. It's one of our favorites!

3 c. cooked and cooled long grain white rice
2 c. cooked chicken, diced
1 c. sliced almonds
1 c. swiss cheese, grated
1/2 c. green pepper, chopped
1/3 c. red onion, chopped

1/2 c. vegetable oil
1/3 c. tarragon vinegar
1/2 tsp. salt
1/2 tsp. marjoram
1/4 tsp. dry mustard
1/4 tsp. pepper


Shake dressing ingredients together in a jar. Mix salad ingredients together. Add dressing. Chill several hours or overnight. (The longer it chills, the better it tastes!)

I usually make a double batch of the dressing. The salad really soaks it up. I add the original amount to the salad at first and then add more to taste after it gets absorbed. Yummy!
