32 oz chicken (it was what I had in my freezer at the time, you can adjust the amount to your liking, but will affect points values)
2 c salsa (or more)
2 c black beans (one can, drained and rinsed)
2 c frozen corn (frozen cuts down on sodium, but canned would work too)
Rice or tortilas.
Put 1 c salsa in crock pot. Put chicken down next. Spread corn and beans around chicken. Cover with remaining salsa. Cook on low for 10 hours. Before serving, pull apart chicken (it will soak up liquid, don't worry). Serve over rice or wrapped in a tortila (extra 2-3 points). Add shredded cheese on top for extra flavor (extra points of course).
