Difficulty: Easy - for beginners
-Medium Shrimp, uncooked, shelled and cleaned (imagine about a handful per person)
-1 bell pepper (chopped)
-1 small onion (chopped)
-1 ripe avocado (cubed)
-1 mango (cubed)
-1 orange (cubed)
-1 can corn
-fresh cilantro (chopped) I love lots of it!
-juice of 1-2 lemons
-red pepper flakes
-pepper and salt (I used lemon pepper!)
-fresh mixed salad greens (best over spring baby greens without strong bitter tastes)
-Boil water and add your shrimp. Once the water boils again, leave shrimp for 2-3 minutes. Remove and drain shrimp (put aside).
-Mix together bell pepper, onion, avocado, mango, orange, corn, and cilantro.
-Remove tails from shrimp and add to salad. (*If the shrimp are really large, cut in half.)
-In a separate bowl, whisk together lemon juice (without seeds!), olive oil, pepper flakes, salt and pepper to taste.
-Mix dressing in with your salad mixture.
-Serve over a bed of mixed salad greens
